Ingredients:
- Two cups plain Greek yogurt (not sweet)
- A quarter cup of sweetener without sugar like erythritol or stevia), or more if you like
- One teaspoon vanilla extract
- Half a cup of mixed nuts (like almonds, walnuts, or pecans), cut
- Half a cup of mixed berries (such as strawberries, blueberries, raspberries), cut small
Instructions:
- Put the plain Greek yogurt, sugar-free sweetener, and vanilla extract in one bowl and mix them well until the sweetener dissolves and it gets smooth.
- Try the yogurt mix and add more sweetener if needed.
- Mix in the cut nuts and berries until they are everywhere in the yogurt.
- Put the yogurt mix in a flat, freezer-safe container and spread it smoothly.
- Cover the container with plastic or a lid and freeze it for around 4 hours until it gets hard.
- Each hour, take it out of the freezer and mix the yogurt well to get a creamy texture.
- When the yogurt ice cream is hard and creamy, take it out into bowls or cones.
- Add more cut nuts and berries on top if you like for extra taste and texture.
- Serve it right away for a soft-serve feel, or freeze it longer for a harder texture.
