Recipe
Ingredients (Makes 12 pieces)
- Almond Flour: 1 cup (100g)
- Unsweetened Cocoa Powder: 1/4 cup (25 g)
- Stevia: 1/3 cup (60 g) or as per taste
- Baking Powder: 1/2 tsp
- Salt: A pinch
- Eggs: 2 large
- Unsalted Butter: 1/4 cup (60 g), melted
- Vanilla Extract: 1 tsp
- Unsweetened Dark Chocolate Chips (optional): 2 tbsp (~20g)
Instructions
Preheat Oven: Preheat to 175°C (350°F). Preheat the oven to 350°F and grease or line an 8×8-inch square baking pan for this cake.
Mix Dry Ingredients: In a separate bowl, whisk together almond flour, cocoa powder, erythritol, baking powder, and salt.
Combine Wet Ingredients: In another bowl, beat eggs, melted butter, and vanilla until creamy.
Mix Wet and Dry: Gradually add the wet mixture to the dry mixture and mix the ingredients gently until they combine properly. Mix until you get a thick batter consistency. If chips are to be employed, they must be folded in.
Pour and Bake: Bake the batter evenly in the pan. If a wooden toothpick inserted into the center of the cakes comes out clean and contains only a little moist batter, the cakes are done baking for 18-20 minutes.
Cool and Slice: After thoroughly baking the brownies on their side, leave them to cool completely on the baking sheet before moving. Slice into 12 pieces.
Tips
Adjust sweetness: Generally, samples should be taken and tasted before baking to add or reduce the sweetener.
Storage: Refrigerate covered in the container for up to 5 days or freeze, covered, for up to 2 months.
