Ingredients:
- 4 large carrots (about 500g), peeled, washed, and grated
- 2 cups unsweetened almond milk (or low-fat or skim milk for a creamier texture)
- 1-2 tbsp powdered dates (for natural sweetness)
- 1 tbsp ghee (or reduce to ½ tbsp for lower fat)
- 2 tbsp chopped nuts (almonds, cashews, pistachios for garnish)
- ½ tsp cardamom powder
- 1 tbsp raisins (optional, for added sweetness)
Instructions:
1. Grate the Carrots
Peel and wash the carrots, then grate them using a hand grater or food processor.
2. Cook the Carrots
In a large pan, melt the ghee on medium heat. Add grated carrots and cook for 5-6 minutes, stirring occasionally, until they soften and release a pleasant aroma.
3. Add the Milk
Pour in the almond milk (or low-fat milk) and bring to a gentle simmer. Let it cook, stirring occasionally, until most of the milk has evaporated, and the carrots become tender, about 20-25 minutes.
