Ingredients:
- 1 cup rolled oats
- 1 ripe banana, mashed
- 2 eggs
- 1/4 teaspoon cinnamon powder
- 1/2 teaspoon vanilla extract (optional)
- 1/2 cup low-fat milk
- Oil or butter for cooking
Instructions:
- In a blender, blend rolled oats until they form a fine powder.
- In a mixing bowl, combine the oat flour, mashed banana, eggs, cinnamon powder, vanilla extract (if using), and low-fat milk. Mix until well combined.
- Heat a non-stick pan over medium heat and lightly grease it with oil or butter.
- Pour a small ladleful of the pancake batter onto the pan.
- Wait until bubbles start to pop up the surface, then cook both sides until golden brown.
- Repeat with the remaining batter.
- Serve hot with toppings of your choice such as fresh fruits, yogurt, or sugar-free syrup.
